Banana & Cranberries Bread

Sunday morning I woke up early and turned the oven on. I was on a mission. A banana smashing mission. I had two overripe bananas in my fruit bowl which needed to be cooked. And it needed to be cooked now. I googled “two bananas recipe” and turned out that I could make banana bread. Did you know that? Only two bananas needed!

Smashed bananas, golden syrup, sugar, egg, wholemeal self-raising flour and a pinch of salt went into a bowl. A greased loaf pan waiting for the goopy mess. But I felt it needed more so I threw in a small handful of cranberries and a sprinkle of ground cinnamon. Mmm… that’s better.

I had a cup of tea while watching the morning news and 30 minutes later, BRRRNNGGG. Banana bread is ready! Woo! It smelled so good. Wished you had smellablogavision. 😛

I had to wake Richard up. I didn’t want to wait another minute. So he stumbled out of bed and I shoved a plate of banana & cranberries bread in one hand and a cup of tea in the other. Let’s just say he didn’t do his usual complaining when I get him up early on the weekend. Hehe…

    Umi: You can reduce the sugar in the recipe and also freeze any extras. Most of my dessert recipes are freezable so you don’t have to pig out all at once. 🙂

    I’m always wanting to homebake bread, but i do not have a bread machine. Most of the time, it needs one.

    You don’t need a bread maker. The name of the recipe could be a bit deceiving if you’re expecting a doughy bread. It’s more like a cake. But banana bread is normally served toasted (under the grill or in a sandwich press) with butter. Like regular toast. I think that’s why it’s called banana bread and not banana cake.
