Out-of-season Roast Chicken

I love roast chicken, even in summer. On cooler days, I’ll roast a whole chook for dinner and the leftovers are perfect for sandwiches and stir-fries the next day.

One of my favourite recipes is smoked paprika roast chicken. I love the taste of sweet honey with the warmth of paprika and the mouth-watering crispy skin.

Smoke Paprika Roast Chicken

Recipe: Smoked Paprika Roasted Chicken
Mods: Used regular paprika, added chilli powder, used salt and minced garlic instead of garlic salt, margarine instead of butter

As with most of our summer dinners, it is served outdoors with a couple of basic mosquito and fly protection devices. Dang flying insects! I guess they have to eat too. Just wished it wasn’t me or my dinner though!

Oh and if you would like to try other great tried-and-true roast chicken recipes, you can’t go pass my all-time favourite tandoori chicken recipe which my mum shared with me and Jamie Oliver’s perfect roast chicken recipe. Jamie’s recipe is a little bit fancy but it packs a lot of flavour!

I’m always trying new roast chicken recipes. I have a stack of them filed away but only a few I cook over and over again. So please share with me your favourite roast chicken recipe. It’ll make me so very happy. 😀

    The only thing I do with my roast chickens is rub the skin with mustard. It crisps up nicely and gives it a really nice taste. I LOVE roast chicken.

    That looks delicious – I was wondering where the rest of the meal was 😛 Oh and I totally agree that leftover chicken is delicious as sandwiches or a stir-fry afterwards. I like to use leftover chicken in a creamy pasta dish – YUM!

    My favourite way to roast chicken changes depending on my mood, but I usually sprinkle rosemary all over it with some garlic butter under the skin (between the skin and meat). Nice and simple, served with roasted whole baby carrots and of course, roast crispy potatoes. Dammit now I want a roast for dinner!

    I actually had the best roast chicken I have ever had the other week and the only difference was we cooked it in the weber.

    Rubbed the skin with a bit of butter and sprinkled on some chicken seasoning then into the weber for an hour. YUM.

    Only eat organic chicken now days – I was amazed at the difference in taste between mass produced and organic when I switched over.

    I just bought a whole chicken and am thinking what to do with it when I read your blog. Your roast chicken really looks yummy. I think Irfan would love it as he likes it crispy. I have been roasting chicken the way we roasted it together (stuffed with lemon, garlic and ginger), remember? I rub all-purpose seasoning all over it, sprinkle a bit of rosemary on it and roast it. Irfan loves it. Maybe I’ll try your version tonight. Thanks for sharing.
